About Baja Fresh: Local Mexican Food, Fresh!
In August 1990, Baja Fresh® Mexican Grill opened its first Mexican restaurant featuring all-fresh, traditional fire-grilled favorites. Like many who grew up on fast food, we realized that it was time for something else, something different and something FRESH.
Baja Fresh continues to be passionate about serving the freshest and highest-quality Mexican food in our bright, clean restaurants. We believe in the benefits of eating well, being active and making a contribution to the communities we serve. We call this philosophy “Live Fresh” and you’ll find this attitude in everything we do.
We choose handmade and farm fresh ingredients for our Mexican food, not tin-canned. You’ll enjoy freshly prepared Mexican platters, not glorified TV dinners from microwaves and freezers.
Flavor and nutrition over fillers and fads.
At Baja Fresh you’ll find eating well is a way of life and a state of mind. We believe in real Mexican food made with passion, for real people. Food that’s always prepared by hand from real recipes and real farm fresh ingredients. Life should be full of variety, zest and positive energy. We love to see our guests energized by good health and good nutrition.
We invite you to Eat Well and Live Fresh by making your local Baja Fresh Mexican restaurant a part of your active daily lifestyle.

Serious about food. Seriously.
We love fun. In fact, we’re fun-loving lovers of fun. And yet, we couldn’t be more serious about our food. We’re talking never-frozen beef, hand-cut fries, real ice cream shakes, and other delicious nouns preceded by quality-assuring adjectives. Here, “serious” and “fun” are one with the bun.
Semi-notable moments in MOOYAH history.
Below are a few MOOYAH milestones. We think the years are fairly accurate. Our intern compiled these from scribbled notes on napkins. To be honest, we’ve been too busy having fun to worry about our place in the pantheon of best burger places. In fact, we’ve been too busy to even look up what “pantheon” means, but we’re pretty sure it’s a good thing.

Our story begins with the passion and creative vision of owner and architect, Gabriel Sanchez, native of Jalisco, Mexico known for the birth to Mariachi music, Charreadas (Mexican rodeos), the Mexican Hat Dance, tequila and the wide-brimmed sombrero, Sanchez wanted to create an experience that would represent his traditional family roots as well as Mexico’s national holiday Dia de los Muertos, Day of the Dead.
Sanchez’s artistic vision was to incorporate “La Calavera Catrina” the icon for the Mexican Dia de los Muertos that represents a time to reconnect with deceased friends, family members and ancestors in a festive spirit of remembrance and celebration with the cultural family values of Mexico. In his journey he has made great friendships with partners, Jose Jimenez and Jaime Magdaleno who have not only brought the management and skills and true authentic spices of Mexico, but the pa
ssion to make the mexican tradition come true. Together they wanted to not only to bring the Mexican culture, but a true experience where people come to have a good time, relax, enjoy good authentic mexican dishes, live music, laugh and love. It truly is a Taste of Mexico.
